I am always developing new recipes for tamales and side dishes. Currently my varieties include: Tomatillo Chicken, Pulled Pork BBQ, Peanut Chipotle Beef, Vegetarian Black Bean Chili, Vegetarian Butternut Squash, Vegetarian Sweet Potato, Grilled Veggies with Goat Cheese, Turkey with Cranberry Chipotle Salsa, and Lamb and Black Bean Chilli. In addition to the tamales at many of my markets I am offering Pulled Pork BBQ sandwiches and shredded jerk chicken sandwiches. I also have a delicious Chicken and Sausage Gumbo. My sides include: a carrot and beet salad, southwestern potato salad, pickled beets and lime marinated cole slaw. I've just added organic garlic, cilantro, scallion tortilla chips served with a home made salsa and white bean dip to my menu. My offerings change depending on what is available at the farms.
